One\u2019s day simply&nbsp; cannot go on without putting the kettle on.<\/p>\n\n\n\n<p>When we talk about \u2018good\u2019 tea, however, what do we mean and how and where does one find&nbsp; it? I specifically deal with Korean tea and Korean tea only, but general rules of sourcing good&nbsp; tea apply everywhere.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">The place<\/h2>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"683\" sizes=\"auto, (max-width: 480px) 100vw, (max-width: 768px) 100vw, (max-width: 1024px) 90vw, (max-width: 1440px) 80vw, 700px\" src=\"https:\/\/www.campariacademy.com\/es-ar\/wp-content\/uploads\/2023\/02\/IMG_0558-copy-1024x683.jpg\" alt=\"\" class=\"wp-image-1646\" srcset=\"https:\/\/www.campariacademy.com\/es-ar\/wp-content\/uploads\/sites\/11\/2023\/02\/IMG_0558-copy-1024x683.jpg 1024w, https:\/\/www.campariacademy.com\/es-ar\/wp-content\/uploads\/sites\/11\/2023\/02\/IMG_0558-copy-300x200.jpg 300w, https:\/\/www.campariacademy.com\/es-ar\/wp-content\/uploads\/sites\/11\/2023\/02\/IMG_0558-copy-768x512.jpg 768w, https:\/\/www.campariacademy.com\/es-ar\/wp-content\/uploads\/sites\/11\/2023\/02\/IMG_0558-copy.jpg 1200w\" \/><\/figure><\/div>\n\n\n\n<p>Tea isn\u2019t too different from wine in that terroir plays a big role. Terroir generally refers to the &nbsp;climate, soil, altitude and latitude of the area in which the tea plant grows in. Climate has a&nbsp; significant impact on the survival of the plant as well as development of flavour and aroma.&nbsp; Generally speaking, it grows best in warm (21-29s), humid climates with a good amount of rainfall. And just like us humans, the tea plant needs a little bit of stress to develop its unique characteristic.<\/p>\n\n\n\n<p>Altitude is important as it influences local climate \u2013 high-altitude areas generally have a complex climate (mist, temperature changes throughout the day, wind, rainfall, etc) which acts as a stressor on the plant. Tea grown in a high altitude will develop a distinct aroma as a result, whereas tea grown in constant climates will have a relatively &#8216;flat&#8217; taste.<\/p>\n\n\n\n<p>Depending on the terroir, the flavour of the tea plant varies vastly. Two areas I source from&nbsp; within Korea, Boseong and Hadong, located along the southern coast, have&nbsp; the ideal environment \u2013 the regions benefit from being in hilly, mountainous areas surrounded&nbsp; by rivers, full of natural minerals. Temperature during picking season in both areas averages at 10-27\u00b0C, with a good amount of rainfall.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">The people<\/h2>\n\n\n\n<p>You often see that tea farms are localised in specific regions \u2013 it\u2019s not only because of the&nbsp; terroir, but also because of the human resources and skillset needed to harvest the leaves.&nbsp; Harvesting and processing skills of farmers, namely picking, withering, oxidising, rolling and drying, significantly impact the flavour of the tea. These are skills that often get passed down to&nbsp; the next generation within the family, and each family will have its own \u2018recipe\u2019 that&nbsp; differentiates its tea.<\/p>\n\n\n\n<p>That\u2019s why we like to source from family-run tea farms that have been run over generations. One family-run tea farm that I work with in Boseong in Korea, for instance, is a fourth-generation tea farm that specialises in green tea; another family-run farm I work with in Hadong, has been running for three generations and has a very unique recipe for \u2018balhyocha\u2019,&nbsp; meaning oxidised tea, which smells and tastes very much like dark chocolate.&nbsp;<\/p>\n\n\n\n<p>Even within the same farm, the flavour of the tea can sometimes differ year by year and flush by flush (flush means the order of picking i.e. first flush means first picking of the year) \u2013 again, not too different from wines in that sense. Although with teas, it\u2019s best (unless it\u2019s fermented tea like puerh) to consume as soon as possible and within the year it\u2019s produced. I always like to sample the teas as soon as they have been harvested (typically around April) to start sourcing for the year.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">The quality<\/h2>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"683\" sizes=\"auto, (max-width: 480px) 100vw, (max-width: 768px) 100vw, (max-width: 1024px) 90vw, (max-width: 1440px) 80vw, 700px\" src=\"https:\/\/www.campariacademy.com\/es-ar\/wp-content\/uploads\/2023\/02\/photo-output-1-1024x683.jpg\" alt=\"\" class=\"wp-image-1645\" srcset=\"https:\/\/www.campariacademy.com\/es-ar\/wp-content\/uploads\/sites\/11\/2023\/02\/photo-output-1-1024x683.jpg 1024w, https:\/\/www.campariacademy.com\/es-ar\/wp-content\/uploads\/sites\/11\/2023\/02\/photo-output-1-300x200.jpg 300w, https:\/\/www.campariacademy.com\/es-ar\/wp-content\/uploads\/sites\/11\/2023\/02\/photo-output-1-768x512.jpg 768w, https:\/\/www.campariacademy.com\/es-ar\/wp-content\/uploads\/sites\/11\/2023\/02\/photo-output-1-1536x1024.jpg 1536w, https:\/\/www.campariacademy.com\/es-ar\/wp-content\/uploads\/sites\/11\/2023\/02\/photo-output-1-2048x1365.jpg 2048w\" \/><\/figure>\n\n\n\n<p>But really, one may ask: How should good tea taste differently from \u2018supermarket\u2019 teas? To put&nbsp; it very simply, good tea won\u2019t need any milk or sugar. It should have a full aroma and flavour on&nbsp; its own, and it definitely will not need any fragrance added to it. Some companies will still&nbsp; infuse natural or artificial fragrance into the leaves, but the general opinion is that good tea won\u2019t&nbsp; need anything extra.&nbsp;<\/p>\n\n\n\n<p>In my opinion, good tea has a unique \u2018sweetness\u2019 that hits you at the back of the throat after a&nbsp; sip \u2013 we call it \u2018returning sweetness\u2019. By that I don\u2019t mean \u2018sugary\u2019 sweetness \u2013 rather, it\u2019s a delicate, pleasant sweetness that lingers in your mouth, with an aroma unique to the tea. Next&nbsp; time you take a sip of your favourite tea, close your eyes, take a deep breath in and take a&nbsp; moment before your next sip to see if there\u2019s a returning aroma and sweetness \u2013as you would when you take a moment to appreciate the flavour of wine and whisky.<\/p>\n\n\n\n<p>Good tea is not hard to find, but you really have to look for it. It starts from looking at the back\u00a0 of the box to see where the tea is from and understanding a little bit more about what makes it\u00a0 special. But it ultimately comes down to what you enjoy the most. Even if someone tells you it\u2019s\u00a0a good quality tea, you may not appreciate it as much \u2013 it\u2019s just not your cup of tea.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>In the
