Elle a travers\u00e9 les continents, depuis son apparition en Asie de l\u2019Ouest vers 1200 avant J.-C. (o\u00f9 elle \u00e9tait consid\u00e9r\u00e9e comme un art obscur proche de la magie), tandis que le brassage et la vinification &#8211; qui rel\u00e8vent de proc\u00e9d\u00e9s chimiques hautement complexes &#8211; \u00e9taient per\u00e7us comme plut\u00f4t simples et faciles \u00e0 comprendre.<\/p>\n\n\n\n<p><strong>Qu&#8217;est-ce que la distillation ?<\/strong><\/p>\n\n\n\n<p>La distillation d\u00e9signe le processus qui consiste \u00e0 s\u00e9parer les composants d\u2019une mixture &#8211; qu\u2019il s\u2019agisse de s\u00e9parer l\u2019\u00e9thanol de l\u2019eau, ou le diesel du p\u00e9trole brut, les principes sont les m\u00eames. Les liquides pr\u00e9sentent diff\u00e9rents points d\u2019\u00e9bullition, et c\u2019est cette diff\u00e9rence de temp\u00e9rature d\u2019\u00e9bullition qui permet la distillation.<\/p>\n\n\n\n<p>Sous pression atmosph\u00e9rique, l\u2019\u00e9thanol passe de l\u2019\u00e9tat liquide \u00e0 celui de vapeur juste au-dessus de 78\u00b0C, contre 100\u00b0C pour l\u2019eau. En cons\u00e9quence, si on chauffe un m\u00e9lange d\u2019\u00e9thanol et d\u2019eau \u00e0 78\u00b0C, l\u2019\u00e9thanol se transforme en vapeur et quitte le m\u00e9lange, laissant l\u2019eau derri\u00e8re lui. Cette vapeur traverse ensuite un condenseur, o\u00f9 elle retrouve son \u00e9tat liquide, avant d\u2019\u00eatre collect\u00e9e.<\/p>\n\n\n\n<p><strong>Pourquoi distille-t-on ?<\/strong><\/p>\n\n\n\n<p>La distillation est utilis\u00e9e pour diff\u00e9rents objectifs, dans des domaines divers et vari\u00e9s. Par exemple, l\u2019industrie p\u00e9trochimique recourt \u00e0 la distillation car le p\u00e9trole brut ne peut \u00eatre utilis\u00e9 comme carburant pour un v\u00e9hicule&nbsp;: on le distille donc afin d\u2019en extraire le diesel qui servira \u00e0 alimenter les voitures.<\/p>\n\n\n\n<p>Au cours de la fabrication de gin, la distillation permet de concentrer et de lier les saveurs s\u00e9lectionn\u00e9es \u00e0 l\u2019alcool&nbsp;; pour la production de whisky, la distillation sert \u00e0 concentrer l\u2019alcool.<\/p>\n\n\n\n<p>Le gin se distille traditionnellement dans un alambic en cuivre. Pourquoi le cuivre&nbsp;? D\u2019une part car c\u2019est un m\u00e9tal mall\u00e9able et relativement bon march\u00e9, facile \u00e0 travailler. D\u2019autre part car le cuivre interagit avec l\u2019\u00e9thanol et \u00e9limine les compos\u00e9s sulfur\u00e9s ind\u00e9sirables de l\u2019alcool, \u00e0 l\u2019origine de la sensation de br\u00fblure \u00e0 l\u2019ingestion. (Une des conditions pr\u00e9alables pour qu\u2019un alcool puisse porter l\u2019appellation de gin distill\u00e9 \u00e9tant que celui-ci ait \u00e9t\u00e9 produit exclusivement par distillation d&#8217;un alcool \u00e9thylique de qualit\u00e9 organoleptique et d&#8217;origine agricole titrant, au d\u00e9part, au moins 96&nbsp;% vol.)<\/p>\n\n\n\n<p>La production d\u2019alcool d\u2019une qualit\u00e9 correcte requiert d\u2019importants investissements, difficilement r\u00e9alisables \u00e0 petite \u00e9chelle. C\u2019est pour cette raison que tr\u00e8s peu de distilleries de gin produisent leur propre alcool neutre de c\u00e9r\u00e9ales, pr\u00e9f\u00e9rant l\u2019acheter \u00e0 un plus gros producteur. Comme son nom l\u2019indique, il s\u2019agit d\u2019\u00e9thanol au go\u00fbt neutre, qui n\u2019apporte donc au gin que l\u2019alcool. Autrement dit, c\u2019est la toile blanche en attente de l\u2019\u0153uvre, les extraits de plantes faisant ici office de peinture.<\/p>\n\n\n\n<p><strong>Quel est le r\u00f4le de la distillation dans la production de gin&nbsp;?<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"578\" height=\"866\" sizes=\"auto, (max-width: 480px) 100vw, (max-width: 768px) 100vw, (max-width: 1024px) 90vw, (max-width: 1440px) 80vw, 700px\" src=\"https:\/\/www.campariacademy.com\/fr-fr\/wp-content\/uploads\/sites\/8\/2023\/10\/2.jpg\" alt=\"\" class=\"wp-image-1927\" srcset=\"https:\/\/www.campariacademy.com\/fr-fr\/wp-content\/uploads\/sites\/8\/2023\/10\/2.jpg 578w, https:\/\/www.campariacademy.com\/fr-fr\/wp-content\/uploads\/sites\/8\/2023\/10\/2-200x300.jpg 200w\" \/><\/figure>\n\n\n\n<p>Chris Garden<\/p>\n\n\n\n<p>Donc, on verse l\u2019alcool de c\u00e9r\u00e9ales neutre dans l\u2019alambic en cuivre, puis on y ajoute de l\u2019eau afin de r\u00e9duire le volume d\u2019alcool \u00e0 50-70&nbsp;% (sans eau, il n\u2019y aurait rien \u00e0 s\u00e9parer de l\u2019alcool). Les extraits de plante sont ensuite ajout\u00e9s \u00e0 la mixture \u2013 la quantit\u00e9 et la vari\u00e9t\u00e9 de ces extraits \u00e9tant \u00e0 la discr\u00e9tion du distillateur. Tout le secret d\u2019un gin au go\u00fbt agr\u00e9able et bien \u00e9quilibr\u00e9, avec des saveurs vives, r\u00e9side donc dans la recette.<\/p>\n\n\n\n<p>Selon les extraits de plantes choisis, il s\u2019agit de jouer avec les quantit\u00e9s pour obtenir l\u2019effet souhait\u00e9 sur le gin final. Par exemple, vous aurez besoin de bien plus de geni\u00e8vre que de cardamone ou d\u2019anis \u00e9toil\u00e9. Ces d\u00e9tails (comme la recette) se d\u00e9couvrent au fil des exp\u00e9riences, des essais et des erreurs. Une fois la recette \u00e9tablie et la production de gin pr\u00eate \u00e0 d\u00e9buter, les extraits de plante sont ajout\u00e9s au m\u00e9lange \u00e9thanol\/eau et laiss\u00e9s \u00e0 mac\u00e9rer&nbsp;; ici aussi la dur\u00e9e de mac\u00e9ration d\u00e9pend du distillateur, mais elle est g\u00e9n\u00e9ralement comprise entre 10 et 24&nbsp;h.<\/p>\n\n\n\n<p>Au cours de la mac\u00e9ration, les saveurs des plantes se diffusent dans le m\u00e9lange alcoolis\u00e9 et, de parfaitement translucide, le liquide devient sombre et trouble, avec un \u00e9clat huileux. On chauffe ensuite la mixture jusqu\u2019\u00e0 atteindre 78\u00b0C pour permettre \u00e0 l\u2019\u00e9thanol &#8211; charg\u00e9 des ar\u00f4mes de plantes &#8211; de quitter la mixture et de poursuivre son voyage jusqu\u2019au condenseur, voyage pendant lequel son interaction avec le cuivre absorbe et \u00e9limine les substances sulfur\u00e9es qu\u2019il contient.<\/p>\n\n\n\n<p>Une fois la vapeur en contact avec le condenseur, elle redevient liquide et coule dans une cuve. Comme le premier liquide r\u00e9cup\u00e9r\u00e9 contient des saveurs astringentes qui n\u2019ont rien \u00e0 faire dans le produit fini, on go\u00fbte le distillat au fur et \u00e0 mesure jusqu\u2019\u00e0 constater la disparition de cette astringence et l\u2019apparition de saveurs d\u2019agrumes et de r\u00e9sineux. On proc\u00e8de alors au changement de la cuve afin de collecter le nouveau liquide de fa\u00e7on s\u00e9par\u00e9e.<\/p>\n\n\n\n<p>Pendant plusieurs heures, les saveurs des plantes se succ\u00e8dent. Le liquide doit toutefois faire l\u2019objet de d\u00e9gustations r\u00e9guli\u00e8res car il arrive un moment o\u00f9 les ar\u00f4mes les plus vibrants auront \u00e9t\u00e9 r\u00e9colt\u00e9s et laisseront place \u00e0 des notes de v\u00e9g\u00e9taux mijot\u00e9s, ind\u00e9sirables dans le produit final. On proc\u00e8de alors \u00e0 un second changement de cuve. (Les trois cuves forment la t\u00eate, le c\u0153ur et la queue &#8211; la t\u00eate et la queue n\u2019ont pas vocation \u00e0 \u00eatre utilis\u00e9es et sont ensuite affect\u00e9es \u00e0 un autre usage ou d\u00e9truites.)
