Mais, si la graisse partage avec l\u2019alcool le pouvoir d\u2019emprisonner et de transporter les saveurs, elle se distingue toutefois par sa capacit\u00e9 \u00e0 pr\u00e9server les nuances les plus d\u00e9licates et volatiles &#8211; pr\u00e9cis\u00e9ment celles que je cherche souvent \u00e0 exprimer lorsque je cr\u00e9e des cocktails.<\/p>\n\n\n\n<p>Historiquement, la graisse a toujours \u00e9t\u00e9 reconnue pour son habilit\u00e9 \u00e0 \u00ab&nbsp;absorber&nbsp;\u00bb les saveurs et les composants parfum\u00e9s&nbsp;: de l\u2019infusion de piments et d\u2019herbes pour concevoir des huiles aromatis\u00e9es destin\u00e9es \u00e0 la cuisine, jusqu\u2019au proc\u00e9d\u00e9 de \u00ab&nbsp;l\u2019enfleurage&nbsp;\u00bb invent\u00e9 dans le sud de la France et traditionnellement utilis\u00e9 par l\u2019industrie du parfum pour extraire les compos\u00e9s odorants des fleurs les plus d\u00e9licates, comme le jasmin ou la tub\u00e9reuse.<\/p>\n\n\n\n<p>Vous l\u2019aurez compris, de nombreuses raisons nous poussent \u00e0 recourir \u00e0 la technique du fat-washing, certaines plus \u00e9videntes que d\u2019autres, entrons donc dans le vif du sujet.<\/p>\n\n\n\n<p><strong>Apporter de la saveur<\/strong><\/p>\n\n\n\n<p>Aussi ennuyeux et \u00e9vident que cela puisse sembler, j\u2019ai toujours \u00e9t\u00e9 fascin\u00e9e par les huiles (l\u2019huile d\u2019olive et diff\u00e9rentes sortes d\u2019huile de noix, comme l\u2019huile de noisette, de noix ou de noix de coco) car elles apportent toutes leur saveur particuli\u00e8re et reconnaissable aux alcools avec lesquels elles infusent. Je suis pr\u00eate \u00e0 parier que je ne suis pas la premi\u00e8re bartender qui, en d\u00e9gustant une huile d\u2019olive vierge de tr\u00e8s bonne qualit\u00e9 s\u2019est dit \u00ab&nbsp;Waouh, c\u2019est incroyable \u2013 comment transformer \u00e7a en cocktail ?&nbsp;\u00bb La r\u00e9ponse \u00e9tant&nbsp;: gr\u00e2ce un peu de travail et quelques \u00e9tapes de pr\u00e9paration suppl\u00e9mentaires (apr\u00e8s tout, vous voulez uniquement le go\u00fbt de l\u2019huile, par l\u2019huile elle-m\u00eame).<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"398\" height=\"530\" sizes=\"auto, (max-width: 480px) 100vw, (max-width: 768px) 100vw, (max-width: 1024px) 90vw, (max-width: 1440px) 80vw, 700px\" src=\"https:\/\/www.campariacademy.com\/fr-fr\/wp-content\/uploads\/sites\/8\/2023\/10\/2-1.jpg\" alt=\"\" class=\"wp-image-1931\" srcset=\"https:\/\/www.campariacademy.com\/fr-fr\/wp-content\/uploads\/sites\/8\/2023\/10\/2-1.jpg 398w, https:\/\/www.campariacademy.com\/fr-fr\/wp-content\/uploads\/sites\/8\/2023\/10\/2-1-225x300.jpg 225w, https:\/\/www.campariacademy.com\/fr-fr\/wp-content\/uploads\/sites\/8\/2023\/10\/2-1-375x500.jpg 375w\" \/><\/figure>\n\n\n\n<p>Huile de piment chipotle et vodka<\/p>\n\n\n\n<p>Rien de plus simple&nbsp;: m\u00e9langez l\u2019huile et l\u2019alcool choisis, laissez infuser le temps souhait\u00e9, placez au cong\u00e9lateur pendant une nuit et filtrez au moyen d\u2019un filtre (\u00e0 caf\u00e9) en papier jusqu\u2019\u00e0 ce que l\u2019alcool retrouve sa clart\u00e9 originale. C\u2019est magique&nbsp;: votre alcool a beau avoir repris son aspect normal, il se r\u00e9v\u00e8le compl\u00e8tement transform\u00e9 une fois en bouche. Si vous avez fait l\u2019exp\u00e9rience avec de l\u2019huile d\u2019olive et du gin, vous voil\u00e0 d\u00e9sormais avec un gin qui a le go\u00fbt de l\u2019huile avec lequel il a \u00e9t\u00e9 infus\u00e9, sans la graisse ni la lourdeur.<\/p>\n\n\n\n<p>Bien s\u00fbr, il existe encore bien d\u2019autres fa\u00e7ons d\u2019apporter des saveurs suppl\u00e9mentaires gr\u00e2ce aux huiles, la plus fr\u00e9quente restant peut-\u00eatre l\u2019utilisation de l\u2019huile elle-m\u00eame pour transporter l\u2019ar\u00f4me d\u00e9sir\u00e9, qu\u2019il s\u2019agisse d\u2019herbes, d\u2019\u00e9pices, de piment ou de tout autre ingr\u00e9dient aromatique. Certes, cela rajoute une \u00e9tape \u00e0 votre pr\u00e9paration \u2013 infuser l\u2019huile au pr\u00e9alable \u2013 mais le reste ne change (presque) pas. Je trouve cette m\u00e9thode particuli\u00e8rement efficace lorsque je travaille des ingr\u00e9dients fragiles comme les fleurs ou les herbes.<\/p>\n\n\n\n<p><strong>Apporter de la texture<\/strong><\/p>\n\n\n\n<p>Il s\u2019agit peut-\u00eatre bien de ma \u00ab&nbsp;manipulation&nbsp;\u00bb pr\u00e9f\u00e9r\u00e9e. Personnellement, je n\u2019ai jamais r\u00e9ussi \u00e0 le faire avec d\u2019autres mati\u00e8res grasses que celles qui se solidifient \u00e0 temp\u00e9rature ambiante \u2013 le beurre, la graisse de canard ou de b\u0153uf, etc. Alors oui, elles apportent de la saveur, mais la v\u00e9ritable raison pour laquelle je les aime tant, c\u2019est qu\u2019elles nappent l\u2019alcool d\u2019un voile d\u2019onctuosit\u00e9 et de douceur.<\/p>\n\n\n\n<p>On dirait presque qu\u2019elles adoucissent les angles pour ne laisser qu\u2019une version arrondie, moelleuse et plus intense de l\u2019alcool de base. \u00c0 mes yeux, rien ne vaut le beurre, parce qu\u2019 \u00ab&nbsp;avec le beurre, tout est meilleur&nbsp;\u00bb. Et l\u2019id\u00e9al, c\u2019est le beurre de baratte, ce qui m\u2019am\u00e8ne \u00e0 mon dernier point\u2026<\/p>\n\n\n\n<p><strong>Apporter de l&#8217;acidit\u00e9<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"605\" height=\"807\" sizes=\"auto, (max-width: 480px) 100vw, (max-width: 768px) 100vw, (max-width: 1024px) 90vw, (max-width: 1440px) 80vw, 700px\" src=\"https:\/\/www.campariacademy.com\/fr-fr\/wp-content\/uploads\/sites\/8\/2023\/10\/3.jpg\" alt=\"\" class=\"wp-image-1932\" srcset=\"https:\/\/www.campariacademy.com\/fr-fr\/wp-content\/uploads\/sites\/8\/2023\/10\/3.jpg 605w, https:\/\/www.campariacademy.com\/fr-fr\/wp-content\/uploads\/sites\/8\/2023\/10\/3-225x300.jpg 225w, https:\/\/www.campariacademy.com\/fr-fr\/wp-content\/uploads\/sites\/8\/2023\/10\/3-375x500.jpg 375w\" \/><\/figure>\n\n\n\n<p>Huile de s\u00e9same et bourbon<\/p>\n\n\n\n<p>Utiliser du beurre de baratte s\u2019apparenterait presque \u00e0 un coup de chapeau magistral&nbsp;: \u00e0 vous les saveurs riches et cr\u00e9meuses, la texture d\u2019une douceur d\u00e9cadente et, pour couronner le tout, la finale acidul\u00e9e impuls\u00e9e par l\u2019acide lactique. Par exemple dans un martini, selon moi, c\u2019est l\u2019\u00e9volution parfaite&nbsp;: on se rapproche de la boisson id\u00e9ale&nbsp;!<\/p>\n\n\n\n<p>En r\u00e9alit\u00e9, ce n\u2019\u00e9tait pas mon dernier point, car la graisse est souvent utilis\u00e9e aussi pour att\u00e9nuer le c\u00f4t\u00e9 \u00e9pic\u00e9, par exemple quand on souhaite mettre en lumi\u00e8re le profil aromatique d\u2019un piment intense &#8211; comme le piment jaune du P\u00e9rou (aji amarillo) ou le piment habanero &#8211; sans subir toute l\u2019intensit\u00e9 du piquant. L\u2019aji amarillo est un merveilleux piment p\u00e9ruvien, \u00e0 la fois tr\u00e8s fruit\u00e9 (avec ses notes de mangue et de fruit de la passion) et extr\u00eamement fort (il pr\u00e9sente un score enregistr\u00e9 de 30&nbsp;000 \u00e0 50&nbsp;000 sur l\u2019\u00e9chelle de Scoville). En l\u2019infusant d\u2019abord dans de l\u2019huile avant de fat washer l\u2019alcool, on conserve les notes fruit\u00e9es tout en contr\u00f4lant le piquant &#8211; autrement dit on r\u00e9v\u00e8le les diff\u00e9rentes facettes du fruit sans se br\u00fbler le palais. Et croyez-moi, on ne parle pas ici de petite br\u00fblure.<\/p>\n\n\n\n<p>Je suis convaincue qu\u2019il existe d\u2019innombrables autres techniques pour utiliser la mati\u00e8re grasse dans les boissons, et je n\u2019ai donc pas fini de m\u2019amuser&nbsp;!
