Mushroom Dirty Martini
Ingredients
- 50 ml SKYY vodka
- 10 ml Cinzano dry vermouth
- 35 ml umami mushroom brine*

- 100 g dried mushrooms (shiitake or hen of the woods)
- 20 g savory salt (equal parts mushroom powder and garlic salt)
- 10 g powdered black garlic
- 1 tbsp tamari
- 1 l water
Stir the ingredients over ice.
Strain into a chilled Martini glass and garnish with dried mushroom or furikake.
*Umami mushroom brine::
Yields 1 litre
Let the ingredients simmer for 20 minutes. Adjust the salt to taste, as all mushrooms are different. Strain through muslin or a coffee filter. Chill before use.
