Wild Turkey 101 pumpkin-pie clarified milk punch

The autumn vibes are big in this clarified milk punch, built off a backbone of pumpkin-infused Wild Turkey bourbon, brown sugar, and baking spices.

Pumpkin Spice Latte Clarified Milk Punch

Ingredients

  • 200 ml pumpkin-infused Wild Turkey 101 bourbon*
  • 125 ml spiced brown-sugar syrup**
  • 300 ml orange & spice tea***
  • 35 ml lemon juice
  • 10 ml saline solution (10:1 water to salt)
  • 150 ml aromatic bitters
  • 115 ml whole milk
  1. Batch together all ingredients except the milk and chill in the fridge for one hour.

  2. Once the batch is chilled, take the milk from the fridge and measure 4.5 parts into the bottom of a deli container.

  3. Then take your batched punch and pour it into the deli container with the milk.

  4. Cover with a lid and put it back in the fridge for 24 hours.

  5. The following day, strain the entire punch through a fine-micron superbag.

  6. Pour 5 parts of the batched milk punch over a large rock in a crushed graham-cracker-rimmed double rocks glass.

*Pumpkin-infused Wild Turkey 101 bourbon

  • 225 ml Wild Turkey 101 bourbon
  • 120 g pumpkin purée

Instructions: Stir together thoroughly and let sit for 24 hours (no need to strain).

**Spiced brown-sugar syrup

  • 200 g brown sugar
  • 240 ml water
  • 1 Ceylon cinnamon stick (cracked)
  • 1 whole nutmeg (cracked)
  • 4 whole cloves

Instructions: Combine all ingredients in a small saucepan and bring to a medium–low simmer. Let the mixture simmer for 15 minutes, stirring occasionally. Make sure the sugar is fully dissolved, then strain out the spices.

***Orange & spice tea

  • 300 ml boiling water
  • 2 orange & spice tea bags

Instructions: Place the tea bags in the boiled water and agitate occasionally. Remove after 4 minutes.
