
Clarified Banana Daiquiri
The frozen, blendered Banana Daq is a classic for good reason…but we absolutely love the complex profile and silky smooth texture of this clarified, Cynar-spiked take.

Ingredients
- 1.5 parts Appleton Estate 15 Year Rum
- .5 parts Banana Liqueur
- .5 parts Cynar 70
- .75 parts Lime Juice
- .5 parts Demerara Syrup (1:1)
- 2 d Aromatic Bitters
- 1 parts Whole Milk
Build all ingredients, except for milk. Then stir, and add milk to the mix slowly, pouring along the side of the vessel.
Allow the mix to sit overnight. The milk should form solid curds.
Strain through cheesecloth, passing the first cloudy runnings back through the mix until it comes out totally translucent.
Stir gently, strain over ice and garnish with a banana chip to serve.
